Curried Rice and Sweet Potatoes
Ingredients
1/2 Cup chopped onion
1/2 Teaspoon minced garlic
1 Cup dry rice
2 Cups water
2 Cups peeled and diced sweet potatoes (yams)
1 Cup peeled and chopped Granny Smith apple
1 Cup frozen peas
1/3 Cup golden raisins
1/2 Cup walnuts, toasted
1 Teaspoon curry powder
Salt to taste
Instructions:
In a pot coated with nonstick cooking spray, sauté' the onion and garlic until tender. Add the rice, water, and sweet potatoes; bring to a boil. Cover, reduce heat, and simmer 15 minutes or until the liquid is absorbed. Carefully stir in the apple, peas, raisins, walnuts, curry, and salt.
