Molasses Sweet Potatoes
Ingredients:
5 Pounds sweet potatoes
8 oz. Steen's dark molasses
4 oz. Unsalted butter
½oz. Kosher salt
4 oz. Large pecans
4 oz. Brown sugar
Instructions:
Peel and chop sweet potatoes into 1-inch by 1-inch pieces. Put into a roasting pan and toss with molasses and brown sugar. Cover with tin foil and roast for approx. 1 hour or until tender. Put potatoes and molasses liquid into mixing bowl and mash. Add salt and top with large roasted pecans. Credits: Commander's Palace
