Spicy Sweet Potato Fries

Ingredients:

2   large sweet potatoes

2   tablespoons vegetable oil

2   teaspoons kosher salt

1/4   teaspoon ground cinnamon

1/4   teaspoon paprika

1/4   teaspoon cayenne pepper

Instructions:

Preheat oven to 425°. Spray a rimmed baking sheet with nonstick cooking spray.

 Peel sweet potatoes. Cut sweet potatoes in half lengthwise. Cut halves into 14-x-4-inch pieces.

 In a large bowl, combine sweet potatoes with vegetable oil, tossing gently to coat. Add salt, cinnamon, paprika, and cayenne to sweet potatoes. Toss gently to coat.

 Spread sweet potatoes in a single layer on prepared pan.

 Bake for approximately 20 minutes, or until golden brown, stirring once.

Serving Size: 6-8 servings
