SAL Sweet Potato and Apple Salad
Sweet Potato and Apple Salad
Ingredients:
5 pounds sweet potatoes
1 Granny Smith apple, chopped
1 cup chopped celery
1 cup chopped pecans
3/4 cup raisins
1 cup sour cream
1/4 cup orange juice
2 tablespoons lightly packed brown sugar
1 tablespoon lemon juice
1/2 teaspoon ground cinnamon
1/2 teaspoon salt
1/4 teaspoon ground ginger
Instructions:
In a large saucepan, cook potatoes in boiling water for 20 to 30 minutes, or until tender. Drain and cool potatoes; peel and cut into cubes.
In a large bowl, combine potatoes, apple, celery, pecans, and raisins, tossing gently.
In a small bowl, combine sour cream and remaining ingredients. Pour over potato mixture, tossing gently to coat. Cover and chill.
