Sweet Potato Haystacks

Ingredients

Vegetable oil, for frying

2   medium sweet potatoes, peeled

Salt, to taste

Cayenne pepper, to taste

Ground black pepper, to taste

Instructions

1. In a large heavy-bottomed pot, pour oil to a depth of 3 inches, and heat to 360º.

2. Cut potatoes into thin strings. Drop potatoes, one small handful at a time, into oil, and fry about 1 minute or until golden brown. Remove from oil with a slotted spoon, and drain on paper towels. Season with salt, cayenne, and black pepper. Serve immediately in mounds.
