Sweet Potato Seafood Boil
For Crawfish and Crabs:
Bring the water to a boil with all of the seasoning included. Add the fresh sweet potatoes (yams) to the boiling water and boil for 10 minutes, but do not remove. Add crawfish or crabs and once water returns to a boil, cook for an additional 8 minutes. Turn the fire off and soak the crawfish or crabs and sweet potatoes for an additional 10 minutes. Remove sweet potatoes and crawfish or crabs from the pot and serve. If using large yams, you may want to cut them into smaller portions after they are boiled.
For Shrimp:
Bring the water to a boil with all of the seasoning included. Add the fresh sweet potatoes (yams) to the boiling water and boil for 15 minutes, but do not remove. Add shrimp, and once water returns to a boil, cook for an additional 3 minutes (this time may vary according to the size of shrimp; bigger shrimp boil for 4 to 5 minutes; smaller shrimp for 2 minutes). Soak the sweet potatoes and shrimp for 5 minutes maximum. If you cook or soak the shrimp too long, the shells will stick to the shrimp and make them very hard to peel, so err on the side of less time. If using large yams, you may want to cut them into smaller portions after they are boiled.
