Tunk’s Stuffed Sweet Potatoes
Ingredients:
10 Baking size sweet potatoes, baked
1 Cup sugar
1 Cup white sugar
1/2 Pound oleo, melted
1/2 Teaspoon cinnamon
1/2 Teaspoon salt
Topping:
2 Cups bread crumbs
1/2 Cup melted butter
1 Teaspoon ground cinnamon
1 Cup chopped, toasted pecans
Instructions:
Scoop out potato meat and mix with all other ingredients. Re-fill the potato skins. Sprinkle topping on top (see below for the topping recipe). Bake for 20 minutes at 350 degrees. Credits: Tunk's Cypress Inn.
