SD Roasted sweet potatoes
Roasted Sweet Potatoes
Ingredients:
4 medium sweet potatoes, peeled and cut into 1- to 1 1/2-inch pieces
2 large onions, cut into large pieces
1 tablespoon chopped fresh sage
3 tablespoons light olive oil
2 cloves garlic, crushed
1 1/2 teaspoons kosher salt
1 1/2 teaspoons ground black pepper
Instructions:
Preheat oven to 400°. Line a baking sheet with parchment paper; set aside.
In a large bowl, combine sweet potatoes, onions, sage, olive oil, garlic,salt, and pepper tossing to coat. Place mixture on prepared baking sheet.
Roast until vegetables are tender, approximately 30 minutes.
